Operation diagram:

1 Pour all ingredients except water and butter into mixing tank and mix at low speed for 1 min
2 Add water, mix at low speed for 2 min and high speed for 5-7 min till dough is well expanded
3 Add yellow butter (or shortening), mix at low speed till even and then high speed till fully expanded, dough temperature needs to be at 26-28°C
4 Let dough rest for 10 min. Divide and shape, put in prover to leaven for 40-50 min (prover temperature: 36-38°C, humidity: 70%)
5 Deep-fry till color turns golden. (Oil temperature: 182-185°C)
