The difference between low-sugar yeast and high-sugar yeast
Also known as ordinary yeast, suitable for dough with less than 8% sugar content or sugar-free products
e.g.: white toast, whole wheat bread, multigrain bread, crusty French bread, etc.
Usage amount: 1-1.2% with dry yeast, 2% -2.5% with fresh yeast
Also known as high-sugar tolerant yeast, suitable for dough with more than 8% sugar content
e.g.: sweet bread, sandwiches, sweet toast, etc.
Usage amount: 1-1.5% with dry yeast, 2% -3% with fresh yeast
